Magnificent Green Sustainable Thanksgiving Feast
Twenty-three of us gathered last year on Sunday, November 23 to share good food and blessings. Our goal was to bring healthy food that was, as much as possible, local and minimally processed, and to avoid plastic and paper waste. People brought a wonderful variety of delicious offerings and their own plates, so clean-up was a breeze. Here are some sources for duplicating some of the wonderful food.

Pumpkin Cupcakes - Vegan, Gluten Free
from Brenda on November 9, 2014 http://www.allysonkramer.com/2014/10/pumpkin-cupcakes/ Whole Grain Multi-Seed Crackers - gluten-free
makes about 20 crackers from Brenda on November 9, 2014 www.gluten-free-vegan-girl.com/2013/08/whole-grain-multi-seed-crackers.html Bake in the pre-heated oven for 30 minutes. Remove from oven and slice into cracker shapes using a pizza cutter. Carefully turn the crackers on to the other side before transferring back to the oven for an additional 20-30 minutes. Allow to cool completely before eating. Store any leftovers (ha, ha) in an air-tight container and they will keep for up to a week or so. I would double this recipe, letting the mix sit in a really large glass or pyrex mixing bowl, while it becomes gelatinous. |
